Viticulture

Cultivar: Cabernet Sauvignon 65%, Merlot 35%

Appellation: Wine of Origin Western Cape

Age of Vines: 8  to 20 years

Irrigation: Drip irrigation

 

Food Pairing

Recommended with springbok carpaccio or mushroom risotto.

Harvest

The grapes were hand-picked from mid February to end of March 2008 with an average yield of 1.3kg per vine.

Maturation

Matured for 16 months in 225 litre French oak barrels. This wine has an ageing potential of 6 years from vintage.

Winemaking

Fermented in 10,000 litre stainless steel tanks with between 25 to 28 days skin contact. Malolactic fermentation occurred in French oak barrels.

Analysis

Alcohol:  13.5%

Total Acidity: 5.9 g/l

pH: 3.55
