Viticulture
Soil Type: Limestone and clay
Average Age of the Vine: 25years
Grape Varieties: 100% Merlot
Pruning: This cuvée is made from several plots located in the highest part of the vineyard that receive special attention during pruning, suckering, bud thinning, green harvesting, etc.
Vine Management: Natural grass cover
Food Pairing
Pair with roast or grilled beef, lamb, game or slow-braised dishes, where the wine’s dark fruit and silky tannins complement savoury, robust flavours. It also works beautifully with mushroom dishes and mature cheeses.
Harvest
Hand harvested at optimum ripeness to preserve balance, freshness and expression. The grapes for the Sélection Parcellaire were harvested by hand from 15 to 20 October. Careful vineyard monitoring ensured the fruit reached the desired balance between ripeness, freshness and phenolic maturity.
Maturation
Ageing: 100% new barrels Ageing Duration: 16 months
Winemaking
Cold soaking and fermentation in oak and stainless steel vats with automatic temperature-control. Post-fermentation micro-oxygenation during maceration and malolactic fermentation in oak and stainless steel vats.
