An Overview

A rich and structured Bordeaux blend with dark fruit, chocolate, and subtle cedar notes.


Winemaker’s Tasting Notes

Intense, dark blueberry and chocolate aromas with thyme and pine nut flavours. A tight structure with depth and roasted coffee bean and cedarwood notes.

Viticulture

Cultivar: Merlot 70%, Cabernet Sauvignon 15%, Cabernet Franc 15%

Appellation: Wine of Origin Western Cape

Age of Vines: 11 to 26 years

Irrigation: Drip irrigation

Food Pairing

Recommended with dry aged grass fed prime rib, wild mushroom and thyme ragout and crispy onions.

Harvest

The grapes were hand-picked from beginning February to end March 2013 with an average yield of 8 ton per hectare.

Maturation

Matured for 18 months in 225 litre new French oak barrels. The wine has an ageing potential of at least 15 years from vintage.

Winemaking

Fermented in wooden vats and stainless steel tanks. 16 to 20 days skin contact resulted in excellent colour, concentration, aroma and flavour compounds.

Total Acidity: 5.8g/l

pH: 3.51
